The movement within the alternative-protein-food industry using sustainable protein from crickets continues. Here’s one of the first cricket-powder-based burger patties in the world.

Our industry colleagues in Malaysia “Ento”, a cricket-based foods firm targets to emulate Beyond Meat’s strategy of B2B before B2C with its newly-launched cricket-based burger patty together with a well-known burger chain to gain customer awareness and increase recognition.

The product, Ento’s insect-based burger patty, has been developed in conjunction with a two-star Michelin chef in Singapore made with plant/based ingredients but further proteinized with cricket powder. It tastes like mushrooms and has a rich umami flavor with a firm bite and looks like a beef burger as they’ve used beetroot juice to make it reddish.

Just like how beyond started, they’ve had an uphill struggle which is relevant for Ento, but if we look from a nutrition standpoint, there are many compelling reasons to adopt insect protein into our diets-it’s high in protein, minerals, fatty acids, B vitamins, etc. and much better for the environment. 

Ento planned to present this patty in Kuala Lumpur, Singapore, Jakarta, Bangkok, and Ho Chi Minh city and considered launching in London, New York which would be ideal since they’ve early adopters and awareness on sustainable insect consumption there.

But regardless of whether in the East or West, it will be younger consumers that are open to the idea of alternative proteins from crickets which is extremely appealing to those wanting to make a difference in sustainability and health.

Every corner of the world is moving into sustainable protein sources with crickets, thus it is very important that the farming and processing of crickets for human consumption really fulfill all global demands on food safety and food security.
